Spicy Arabian Majboos

Ingredients

  1. 1 kg Basmati rice
  2. 1 1/2 kg large chicken pieces
  3. 2 medium-sized onions, finely chopped
  4. 1 carrot, chopped
  5. 1/2 inch ginger
  6. 1/2 cinnamon
  7. 6 cloves garlic
  8. 4 cardamom
  9. 4 cloves
  10. 2 tomatoes, sliced in half
  11. 1/4 cup fresh lemon juice
  12. 1/2 tsp turmeric powder
  13. 3 hard boiled eggs
  14. Coriander leaves for garnishing

Method

  1. Mix garlic, ginger, cardamom, cinnamon, lemon juice, salt, two tablespoon oil, cloves and turmeric powder in a bowl.
  2. Apply this paste on the chicken pieces thoroughly and set aside in the refrigerator for an hour.
  3. Heat oil in a large pan and sauté until translucent.
  4. Add the remaining spices, carrots, tomatoes, salt and chicken pieces and sauté for 5 minutes.
  5. Add water and bring to boil.
  6. Once the chicken is cooked, remove with a slotted spoon along with the tomatoes.
  7. Pass the chicken broth through a sieve and boil.
  8. Add rice to the broth when it starts boiling
  9. Cover the pan and let the rice cook.
  10. Lightly fry the chicken pieces.
  11. Spread the rice into a dish and place the fried chicken pieces.
  12. Garnish with boiled eggs and coriander leaves
